Exploring the vitality of wines and the evolution of life in the vineyards through the experience of biodynamics applied to the entire ecosystem.
Vines : 30-40 years old
Blend : Roussanne, Rolle, Grenache blanc
Terroir: Plot of “High Terrace” gravel, fine clay and limestone
WINEMAKING & AGING
Vinification and aging are carried out by plot and by grape variety, in concrete tanks and barrels (400 L, dried in a Burgundy climate). Blending is discussed at 9 months post-aging, with the selection of the best barrels and tanks. The wine is then aged for 12 months on its fine lees.
